Try Any Type or Color of Potato
You can make this recipe with literally any type (and color) of potato! Different types of potatoes have specific nutrients and tastes, but all of them work for this recipe! Just keep in mind different potatoes work with different flavors, so try to pair your sauce accordingly! We’ve given you some ideas below:
Gold potatoes, sometimes called Yukon Gold potatoes, are high in lutein which is an antioxidant that supports eye health. They also contain high amounts of potassium and vitamin C. Yellow potatoes have a sweet flavor and waxy texture, which pairs really well with sage aromas and creamy cheese sauces.
White potatoes have been shown to have many benefits including improving digestive health, blood sugar control, and even offering tons of essential vitamins and minerals. Gnocchi made with white potatoes will pair best with classic red sauces as well as pesto. Try our Oil-Free Pesto to top this dish!
Delicious and nutritious, sweet potatoes are packed with essential nutrients like fiber and vitamin A. Fiber supports healthy blood sugar levels and digestion, while vitamin A benefits your eye health. For this variety of potatoes, the flavor is in the name. Try a rich brown butter sauce for gnocchi made with sweet potatoes to pair with its sweet flavor.
Just by looking at these potatoes, it’s clear from the purple color that these tubers are bursting with amazing nutrients. The antioxidants in purple potatoes have been shown to help with lowering cholesterol, improve your eye health, and even lower your risk for chronic diseases. Purple potatoes are surprisingly average in flavor and are usually compared to your everyday potato. However, for appearance sake, try this homemade gnocchi with a simple garlic and olive oil sauce.

First, boil your potatoes by placing them in a pot and covering them with cold water. Salt the water, then bring to a boil over medium heat. Cook them for 15 minutes or until the potatoes are fork-tender. Once cooked, remove the potatoes from the pot and let them cool. Then, remove the skins and mash the potatoes with a potato masher.
Once ready, clean a flat surface and lay the mash into a thin layer, then top with flour. Use your hands to combine the potato mash and flour to form a ball of dough. Make sure not to over-knead the mixture. Divide the ball into four sections, then roll one section into a long log-shaped piece. Then, cut the log into 1” pieces, then use a fork to make shallow grooves into your gnocchi pieces. Repeat this with the rest of the dough.
Once your gnocchi is ready, boil a large pot of water with salt. Add your gnocchi and cook for 4-5 minutes or until they float. Carefully remove them with a slotted spoon and serve with your desired sauce and additions.
